Mango, Beans, & Quinoa Salad

If you are looking for a salad full of protein, healthy carbs, and fats then try this delicious dish perfect for lunch or a post workout meal.

Ingredients:

1 cup quinoa (make sure to rinse and drain before cooking)

1 can (14 oz) of black or red beans

1/2 cup of fresh mango cut into small pieces

1/2 cup of red bell pepper diced into small pieces

1/2 cup of green onions very thinly sliced

1/4 cup of fresh cilantro

Dressing

4 tablespoons of virgin olive oil

4 tablespoon of red wine vinegar (I used sherry vinegar)

2 tablespoons of lime juice

1 teaspoon of fresh minced or powdered garlic

salt and pepper as needed

Directions:

Cook the quinoa according for about 20 minutes and cool down before mixing

with diced mango, rinsed beans, diced red pepper, sliced greens onions, and cilantro.

In a large bowl whisk together the olive oil, lime juice, vinegar, garlic, add salt and pepper as needed.

Mix everything well together and cool down in a refrigerator for about 30 minutes before serving.

You can serve this for lunch or even a side dish for  your dinner.
