Zapiekankas are Poland´s most popular street food. What is great about them is that they are easy to make and can be a healthy snack or meal for any occasion. Try the recipe below and get a little taste of my homeland right in your kitchen. Smacznego!
Ingredients:
Ciabatta long banquette
1/2 lb of baby Portobello mushrooms
1/2 cup of chopped onion
1/4 cup of fresh chopped parsley
1 tablespoon of olive oil
salt and fresh pepper
1/4 cup of Parmesan cheese
1/2 cup of Monterrey or Gouda cheese (not in picture)
Directions:
Wash the mushrooms and slice into small pieces. Sauté with onion, add salt and pepper as needed and parsley.
Mix and cook until the water from the mushrooms is gone.
Cut the baguette into 4 pieces and place on top of it the cooked mushrooms.
Sprinkle your favorite cheese on top, this can be mozzarella, Gouda, or cheddar.
Place in the oven at 350 F and bake for about 20 minutes.
Wait for it to cool and top it off with your favorite condiment like ketchup, hot sauce, or parsley.
You can serve these as an appetizer or make extras for a main dish. Enjoy!
