On a recent return trip from the market I was surprised by my neighbor with a gift from their garden. It was a basket full of delicious heirloom tomatoes. With some fresh mozzarella I was inspired to make a quick salad. Try this delicious recipe for a light snack or lunch. Perfect for the summertime.
Ingredients:
1 pound of mixed medium and large tomatoes, preferably heirloom, cut into thin slices
4 oz of fresh buffalo mozzarella cheese torn into small pieces
2-3 tablespoons (or more) extra-virgin olive oil, divided
a bunch of small basil leaves
salt and pepper to season
Makes 2 platters
Directions:
Arrange tomato slices on a platter, slightly overlapping; season generously with salt, add mozzarella and fresh basil leaves.
Top the salad with basil and additional salt and oil, if desired. Serve with a healthy multigrain toast.
