Garbanzo Curry with Spinach Cauliflower and Eggs!

Inspired by “The Healthy Heart Diet Plan” Spring 2022 magazine, I made this delicious and healthy garbanzo curry with cauliflower, spinach and eggs dish. Make this meal and serve with your favorite toasted naan bread for a lunch or dinner. Delicious and healthy! Enjoy!

Ingredients:

1 cauliflower (medium size)

4 eggs

2 onions (medium size)

1-2 tablespoons olive oil

4 tablespoons curry paste (I used Patak’s)

1 tablespoon sugar

2 cans (4 cups) garbanzo beans

1 can (2 cups) coconut milk

4 cups fresh spinach (frozen ok)

naan bread (sliced and toasted)

Chop onions and sauté for a few minutes.

Add curry paste and cook for another minute or two.

Add sugar, beans, coconut milk and cook for a few minutes (8-10 minutes).

Using potato masher crush half of the beans.

Add spinach and cook for another couple of minutes.

Serve with cauliflower, eggs and toasted naan. This is a perfect dish for a lunch or dinner. Enjoy!

*Add more coconut milk if needed

*You can serve the beans with grilled chicken instead of eggs

*Season with salt, pepper and extra curry if you like spicy
