If you like beets, you will love this delicious salad. Sweetened by peaches, its full of mixed greens topped with hazelnut dressing. Perfect dish to serve during this summer. Bon Appetit!
4 medium size beets (about 1 1/2 lb)
4 ripe peaches
4 cups packed mix greens salad
1 cup whole milk yogurt
1 tablespoon olive oil
5 tablespoons chopped and toasted hazelnuts
1 tablespoon honey
1 teaspoon lemon juice
1/2 teaspoon kosher salt
1/4 fresh ground black pepper
fresh mint leaves and thorn basil
Roast the beets until soft and tender at 400F for 40-50 minutes.
Let it cool, peel and cut into small wedges.
Next, place the beets in a medium size bowl and mix with olive oil, 1/4 teaspoon of salt and pepper.
Next, prepare the dressing. In a food processor, mix the yogurt, 3 spoons of chopped hazelnuts, honey, lemon juice and the remaining of the 1/4 salt. Mix in a blender or food processor till smooth and chill in a refrigerator until ready to use.
Place the salad greens on platters and drizzle with half the dressing. Top with beets, peaches, and hazelnuts.
Drizzle with the remaining dressing and serve with fresh mint and basil. Enjoy!
