Cauliflower Soup

A couple of months ago I had this delicious cauliflower soup at a local café and since then I wanted to make this soup myself. I have tried several recipes and this one is really easy to make (no cream or milk needed) and its delicious and healthy.  You can serve this soup as an appetizer or a main dish. Enjoy!

Ingredients:

1 medium size cauliflower

2 spoons of olive oil

4-5  cups of chicken and or vegetable stock

2 cloves of garlic

1 medium size onion

1/2 cup of Parmesan

Salt and pepper to season

Directions:

Chop the garlic and onion.

Sauté for a few minutes.

In the mean time separate the cauliflower florets.

Add the florets to the garlic/onion mix and add 4 cups of mix of vegetable and chicken broth.

Cover and simmer for 20 minutes. Add water or extra leftover chicken broth if the soup is too thick and season with salt and pepper.

When ready cool down the soup for a few minutes and blend or mix.

Serving this soup with a side of Parmesan crisps adds an extra bite and makes this soup much more richer.

You can add mini bruschettas and serve this soup for lunch.

You can also bake the remaining of the cauliflower and mix it in with the soup.
