Split Pea Soup

I have been trying different recipe for meatless split pea soup and this one is easy and perfect light meal served late in the evening. Also, good source of protein and fiber. Enjoy!

Ingredients:

  • 6 cups vegetable broth
  • 2 cups dried green split peas, rinsed
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots (1 cup) chopped
  • 2 celery chopped
  • Green onion sliced
  • Lemon
  • 1 teaspoon of paprika
  • 1/2 teaspoon of dried basil
  • 1/4 teaspoon of cumin
  • Salt and pepper to taste

Chop onions.

Dice garlic.

Chop carrots and celery.

In a large pan cook onions and garlic.

Add carrots and celery and cook for a few minutes.

Add peas, chicken broth spices, lemon juice and cook for another 45 minutes.

When cooked divide half and blend. When blended combine together season more if needed and simmer for a minute or two.

Serve with green onions and lemon rings. Enjoy!
