Banana & Oatmeal Pancakes

I tried these delicious pancakes several years ago while visiting my friends in Europe and totally forgot to ask for the recipe. Since then, I have tried several recipes but this one is the easiest, healthiest, and most delicious version. Did I mentioned these pancakes are gluten free! Your belly will be happy!

Ingredients:
2 ripe bananas (medium size)
2 eggs
1 cup of quick cook oatmeal
1 teaspoon of vanilla extract
Toppings: your choice of maple syrup, fruits, and nuts

Mash bananas with a fork in a large bowl until smooth

Mix in 2 eggs

Add 1 teaspoon of vanilla extract

Add 1 cup of quick cooked oats and mix everything together

Use a mini pancakes pan or regular pan. With this mini pancakes pan you should get 12 pancakes. If you use regular pan use 2 spoons for one pancake (you should get 6 large pancakes).

Use a spoon to fill each “pan whole”

Cook on a medium heat for about 2 minutes and flip over and cook the other side till its almost golden brown.

Serve with your favorite toppings!
