Chicken with Mashed Broccoli and Cauliflower

This is an extremely easy and delicious dinner for any day of the week. A perfect serving of protein, carbs, fiber, and healthy fats.



1 lb skinless, boneless chicken breast halves

1 1/2 cups of cherry tomatoes

1 1/2 cup of fresh broccoli

2 cups of fresh cauliflower

1 Tbsp Olive Oil

1/4 tspn of Salt

1/4 tspn of Fresh Pepper

1/2 tspn Hungarian Style Sweet Paprika

For extra taste add 1 Tbsp of butter or olive oil to the mashed broccoli and cauliflower. Bon Appetite!


1. Season the chicken with salt paprika and salt; (if time permits) wrap in a plastic foil and place in refrigerator for at least 30 minutes to marinate.


2. Steam or boil cauliflower and broccoli for a few minutes. Remember to put in the cauliflower first for 5 minutes, then add broccoli after for another 3 minutes. Rinse the water away and put a teaspoon of olive oil or butter (if desired) for additional flavor.

3. Saute cherry tomatoes with garlic and a teaspoon of oil olive for a few minutes (5-8 min) and cover to keep warm before serving.

4. When ready to serve, mash the broccoli and cauliflower with a teaspoon of butter or olive oil. Put the mashed broccoli and cauliflower on a plate, then put the chicken on top and serve with a side of the sauteed cherry tomatoes. Bon Appetite!
