This is a delicious and healthy salad that you can make for lunch or anytime you want to have a healthy snack. Add chicken and you can have a complete meal full of vitamins and protein.
Ingredients:
2 Cups of fresh baby kale leaves
1 cup of cooked quinoa
1/2 cup of fresh blueberries
1/4 cup of toasted pecans
1/4 cup of cranberries
1/4 cup of goat crumbles cheese
1-2 spoons of citrus dressing
Directions:
Cook quinoa as per instructions on the package and add to kale after it cools.
Add blueberries, toasted pecans, cranberries, and sprinkle with goat crumble cheese.
Add citrus dressing (1/4 cup of olive oil, 2 spoons of sherry vinegar, 1 spoon of lemon juice, salt and pepper to season), and mix everything together.
Sprinkle with extra goat cheese if you like or add grilled chicken for extra protein. Enjoy!
