This yummy farfelline pasta, asparagus mozzarella, tomatoes enhanced with gremolata will be your crowd favorite dish for this season!
8 oz. dried farfalline or your favorite pasta
1 cup of fresh mini mozzarella
1 cup of cherry tomatoes
1 cup of asparagus
2 tablespoons of olive oil
4 cloves of garlic
1 tablespoon of balsamic vinegar (white preferably)
1/4 cup of chopped fresh basil and parsley
1 tablespoon of lemon zest
salt and pepper
Cook pasta according to directions (add asparagus to the pasta and cook for another 3 minutes).
In the mean time in a large bowl, whisk together; olive oil, balsamic vinegar, salt and pepper.
Cut asparagus into bite size pieces.
Cut tomatoes into half.
Chop fresh basil.
Chop fresh parsley.
Prepare gremolata mixing together; basil, parsley, lemon zest, minced garlic, and a touch of olive oil.
Add (cooked and chilled) pasta with asparagus to the dressing and gently mix.
Add mozzarella, tomatoes, and gremolata. Mix gently to combine.
Served immediately or chill up to 24 hours. Enjoy!
