Fall season is here and its time to take advantage of the great weather and go pumpkin picking. Next time you head over to your local farmer’s market make sure to pick out some great pumpkins and make this delicious Pumpkin Bread recipe at home. Add orange zest and orange juice for more flavor and top the bread with pumpkin seeds for extra flavor. Enjoy!
1 stick unsalted butter, melted, plus more for pan
2 cups unbleached all-purpose flour, plus more for pan 1 cup sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1 1/4 cups pure pumpkin puree
3 large eggs, room temperature
2 teaspoons grated orange zest, plus 1/4 cup fresh juice
1 teaspoon pure vanilla extract
1/3 cup pepitas
In a large bowl, whisk together dry ingredients: flour, sugar, salt, baking powder, baking soda, allspice, and nutmeg.
In another bowl, whisk together: butter, pumpkin, eggs, orange zest, juice, and vanilla until smooth.
Make a well in flour mixture and pour pumpkin mixture into it. Stir together just until combined.
Bake for an hour and 10 minutes (until a tester inserted into center comes out clean).
Let it cool in a pan for 10 minutes, then transfer the loaf to a wire rack and let it cool completely.
