Today we had a huge snow storm pass our town so I stayed home all day and baked this wonderful banana bread. This is a perfect recipe for an afternoon snack or a quick bite for breakfast.
Ingredients:
- 1⁄2 cup butter (1 stick)
- ½ cup brown sugar
- 2 eggs, beaten
- 3 bananas, finely crushed
- 1⁄2 cup flour
- ½ whole wheat flour
- ½ cup oatmeal
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup chopped pecans
- ¼ cup of raisins
Directions:
Grease the pan.
Soak raisins in Grand Marnier.
Crush the bananas well.
Sift together flour, baking soda, and salt.
Cream together butter and sugar.
Beat the eggs.
Add beaten eggs, vanilla extract, crushed bananas, and mix well. Then add the flour mixture.
Lastly add raisins and chopped pecans and mix gently.
Bake in the oven at 350 degrees for 55 minutes.
Check with a stick if baked.
Makes perfect addition to a fancy brunch, breakfast, or a healthy snack. Enjoy!
