Simply Delicious Summer Salad

I tried this delicious spring salad a couple of weeks ago at the local supermarket and I finally got a chance to make it this weekend. You can add any vegetables and mixed greens you want, try it as a lunch or a side dish for dinner. It is so delicious, simple and easy to make, Enjoy!

Ingredients

2 cups of garbanzo beans*

1 cup of chopped tomato

1 cup od chopped cucumber

1 cup of chopped radishes

1/2 cup of chopped fresh basil

1/2 cup of chopped fresh parsley

1/2 cup of chopped (green and white parts) scallions

Dressing:

1/4 cup of olive oil

1/2 cup of red wine vinegar

1/4 teaspoon of salt

1/4 teaspoon of pepper

*Buy Organic Garbanzo beans if you can and rinse.

Mix together garbanzo beans with chopped tomatoes, cucumber, scallions, radishes, basil, and parsley and add dressing and mix some more

Serve this salad for a lunch or a side dish. Enjoy!
