Mother’s Day Delicious Brunch!

Celebrate Mother’s Day with a delicious Spring Frittata brunch.  This is a very simple recipe that uses only a few ingredients. You can serve this for any meal of the day.  Enjoy it with a cup of tea and a side of salad.

Ingredients:

1 1/2 Tbsp extra virgin olive oil

2 cups of fresh asparagus, cut into 1 inch pieces

2 cups of chopped broccoli

1 cup of cherry tomatoes

8 large eggs

1 1/2 tsp. kosher salt

3/4 tsp. black pepper

2 oz. of fresh goat cheese, crumbled

1 tsp. sherry vinegar

4-6 cups of fresh watercress

Cook the asparagus for 3 minutes in 1 tablespoon of olive oil, add broccoli and cherry tomatoes

and cook for another 2-3 minutes.

Whisk together eggs (add salt and pepper) and pour over the vegetables,

cook for another 1 minute stirring gently. Sprinkle with the goat cheese and transfer the pan to the oven and bake in 400 degrees for another 10-12 minutes.

Whisk together the vinaigrette, olive oil, add salt and pepper, toss with the watercress and serve with the Frittata.

I serve the Frittata with home made mini bran muffins, fresh fruit salad and tea.
