Baked Black Lentils with Coconut & Cilantro!

Make These Delicious Baked Black Lentils with Coconut and Cilantro for Dinner or Family Gathering.

Ingredients:

1 pound dried organic black lentils

1 tablespoon coconut oil

1 yellow onion

1 teaspoon ground ginger

1/2 teaspoon turmeric

1 cup pitted dates

1 tablespoon tamari

1/2 cup shredded unsweetened coconut

1/2 cup roughly chopped cilantro

In a large saucepan, heat oil over medium heat. Add chopped onion and cook until softened and beginning to brown (about 8 minutes). Add ginger and turmeric, mix and cook for another minute.

Add 6 cups of water, rinsed and drained lentils, and chopped dates and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes.

Preheat the oven to 350 F. Stir in tamari and transfer lentils to a baking dish. Cover and bake 30 minutes.

After 30 minutes uncover, top with coconut and bake for another 15-20 minutes until lentils are tender and coconut is golden.

Garnish with cilantro and lemon before serving.
