Chicken Skillet with Mushrooms Onions & Parmesan

 

Inspired by Bill Bradley @mediterranean_living I created my own version of this delicious and healthy “skillet chicken 🐓 with mushrooms 🍄 onions 🧅 and Parmesan 🧀 dish”. Yummy 😋

Ingredients:

1 ½ pounds of chicken breast

3 Tablespoons of olive oil

1 Tablespoon balsamic vinegar

½ teaspoon salt

½ teaspoon pepper

1 teaspoon dried thyme

¼ cup white wine

1 onion, sliced into rounds

10 oz. Portobello mushrooms, sliced

½ cup vegetable or chicken broth

2 ounces fresh shaved parmesan

Cut chicken breast into ½” strips.

Add to the bowl and mix with 1 tablespoon of olive oil, balsamic vinegar, ¼ teaspoon salt, ¼ teaspoon pepper, thyme and white wine. Let it marinade for 30 minutes. Best if you marinate the night before.

Slice the mushrooms into small pieces.

Slice the onion into rings.

Add 2 tablespoons of olive oil to the skillet. Add onions to the pan and sauté for 3 minutes on medium heat.

Add mushrooms, vegetable broth, and remaining of the pepper and salt to the pan. Let it simmer until mushrooms are cooked and tender.

Remove mushrooms and onions from the pan.

Add marinated chicken and marinade to the skillet. Cook for 3-5 minutes on one side. Flip and cook until done.

Add mushrooms and onions back into the pan and simmer for a couple of minutes to serve hot.

Top with shaved parmesan and fresh parsley.

Serve with your favorite side dish, red wine and enjoy 😋.
