Healthy Lunch To Go!

This is an easy and healthy way to prepare pasta, spinach, tomatoes, and mozzarella for a lunch that can be enjoyed anytime.

Ingredients:

1 1/2 cup of cooked whole wheat penne pasta

1 cup of fresh baby leaf spinach

1 cup of cherry tomatoes

1/2 cup of fresh pearl mozzarella cheese

1 spoon of balsamic vinegar or olive oil

Makes 2 servings

Directions:

You will need 2 x 20 oz mason jars

Place spinach on the bottom, then add cooked and chilled pasta, add more spinach and tomatoes, cover with mozzarella balls and closed the jars with a cover.

Add balsamic vinegar or just olive oil before serve. Enjoy!
