Summer Picnic for Two!

If you are looking for the perfect picnic meal this summer then check out this recipe. Includes a summer salad, delicious mini sandwiches, blueberry oatmeal cookies, fresh cherries, and lemon lime ice water.

Simply Delicious Summer Salad

This is so easy to prepare! Add half an avocado to this recipe for extra taste and volume.

Mini Sandwiches

To make these mini-sandwiches you need a fresh multi-grain banquette and cut it in half.

On one half, drizzle with olive oil, add sliced grilled chicken, avocado, cucumber, and season it with salt and pepper.

On the other half spread honey Dijon mustard and add fresh mozzarella, tomato, fresh basil, and season it with salt and pepper.

Wrap the sandwiches in parchment paper and tie with a baking string. Then, cut each sandwich again in half.

If the picnic turns into a long afternoon you may need something sweet.

These blueberry, pecan, and oat cookies are a perfect addition, especially now that we are in the blueberry season.
